Ingredients
- 2 cups basmati rice
- 500 grams chicken (boneless or with bones)
- 1 large onion (thinly sliced)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 tablespoon yogurt
- 2-3 bay leaves
- 4-5 cloves
- 2-3 cardamom pods
- 1 cinnamon stick
- Salt to taste
- 1 tablespoon ghee or butter
- Water
Instructions
- Wash and soak the basmati rice in water for about 30 minutes.
- In a large pot, heat some oil and sauté the onions until golden brown.
- In the same pot, add the ginger-garlic paste and cook for 1-2 minutes.
- Now, add the chicken pieces and cook until they are browned. Add the red chili powder, turmeric, garam masala, and salt. Cook for 5-7 minutes.
- Add the yogurt and a little water, then cook until the chicken is tender and the gravy thickens.
- Meanwhile, bring water to a boil in a separate pot for cooking rice. Add bay leaves, cloves, cardamom, and cinnamon to the boiling water.
- Add the soaked rice to the boiling water and cook until 70-80% done. Drain the water and set the rice aside.
- Layer the partially cooked rice on top of the chicken gravy. Drizzle some ghee or butter on top and cover the pot with a tight-fitting lid.
- Cook on low heat for about 15-20 minutes to allow the flavors to meld together.
- Garnish with the remaining fried onions and fresh coriander leaves.
- Serve hot with raita or a side salad!

- 250 grams paneer (Indian cottage cheese)
- 1 large tomato, pureed
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder

Instructions
